Kale Caesar Salad

Dont be afraid of a little anchovy paste! Not only does this salad taste delicious, it is filled with healthy fats and protein. The lime twist is seriously a game changer.

  • 4 Cups Fresh kale, chopped
  • 4 Cups Fresh romaine lettuce, chopped
  • 2 Cups Croutons
  • 3/4 Cup Parmesan cheese, grated
  • 1 Cup Cherry tomatoes, haved
  • Lime Dressing
  • 1/2 Cup Greek yogurt, low fat
  • 1/2 Cup Parmesan cheese, grated
  • 3-4 tbsp Fresh lime juice
  • 1 tbsp Extra Virgin Olive Oil
  • 1-2 tsp Anchovy paste
  • 2 tsp Worcestershire sauce
  • 1 Clove Garlic, pressed or finely minced
  • 1 tsp Dijon mustard
  • 3-4 tbsp Skim milk
  • Salt and pepper to taste

How to Make It


Add the kale, Romaine, croutons, Parmesan, dressing, and tomatoes (if using) to a large bowl. Toss until combined.


To make the dressing: Add all ingredients except milk to a small mixing bowl, and whisk together until combined and smooth. Whisk in a tablespoon of milk at a time until the dressing reaches your desired consistency.
