Beet Greens Pesto

Don't throw away those beet greens! Not only are they super nutritious, they can be used for so many things - including a delicious pesto. Perfect for pasta or a dip!

Beet Greens Pesto



Dietary Preference(s):



  • 2 Cups beet tops and stems
  • 1/3 Cup pine nuts, or any seed if you are nut free
  • 2 garlic cloves
  • 1 handful of fresh basil
  • 1/2 Cup extra virgin olive oil or avocado oil
  • 1/2 Cup parmesan cheese
  • 1/8 Teaspoon Salt
  • 1/8 Teaspoon Pepper

How to Make It

Wash, dry (make sure they are pretty dry), and cut beat greens into small chunks/pieces

Add all ingredients to a food processor and blend until desired consistency (add more olive oil if needed).

Serve over pasta or use as a dip with fresh veggies
