Preheat oven to 375F.
Combine all ingredients, except water, into a bowl and mix. Add to a baking dish and add the cup of water on top.
Cover with tin foil and bake at 375F for 45 mins.
After 45 mins remove the foil and cook for another 20-30 mins until the potatoes are fork tender and the sauce has thickened. Serve hot, topped with feta and olive oil.
