Arugula, Avocado and Strawberry Salad

  • 3-4 cups baby arugula
  • 1 avocado, cubbed
  • 1 small red onion, thinly sliced
  • 2 mini cucumbers, sliced (or 1/2 an english cucumber)
  • a handful of pea shoots or sunflower sprouts
  • a handful of cilantro, chopped
  • salt & pepper to taste
  • 6 ripe strawberries, hulled
  • Creamy Sesame Dressing:
  • 2 tablespoons raw tahini
  • 1 tablespoon coconut aminos
  • 1 1/2 tablespoons apple cider vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon roasted sesame oil
  • 1-2 pinches dry ginger
  • splash of mirin cooking wine (optional)

How to Make It

Prepare salad items and place in a bowl.

Whisk together dressing ingredients.

Toss in with salad.

Also pairs well with grilled prawns or salmon.
