Ingredients

  • 1 head garlic
  • 1 tablespoon olive oil
  • 1 tablespoon white win vinegar
  • 1 tablespoon digon mustard
  • 1/4 cup olive oil
  • salt
  • 1 pound cherry tomatoes
  • 1 handful basil, fresh chopped

How to Make It

Preheat oven to 375°f. .

Wrap the garlic and 1 Tablespoon of oil in foil and roast in the oven for 1 hour until soft.

Remove and leave to cool.

Remove the flesh from the garlic by squeezing out the roast garlic.

Add the ¼ cup oil, vinegar, mustard, salt and honey, mix well.

Whisk until it becomes thick.

Taste and season as necessary, adding more vinegar if needed.

Place the tomatoes in a bowl and pour over the dressing and toss to coat.

Top with some of the fresh basil and serve immediately.
