Add 2 tbsp olive oil to a pot and cook the meat until browned.
Add in the onions and cook them until translucent. Add in the garlic and cook for another 2 mins
Add in the red onion, red peppers, chili powder, ground cumin, oregano, lemon juice and zest.
Pour in the crushed tomatoes and the one cup of stock. Bring to a boil and simmer for 45 mins. In the last five mins add in the spinach and cook until wilted. Add in the vinegar and stir.
. Serve topped with feta, olives, and yogurt, if desired.
