Ingredients

  • 3 cups Quick oats
  • 1/3 cup Pumpkin seeds
  • 2 tbsp Sesame seeds
  • 1/2 cup + 1 tbsp Peanut butter
  • 1/2 cup + 1 tbsp Maple syrup
  • 1/2 tbsp Harmonic arts mushroom tincture
  • 1 tbsp Maca powder
  • 1/2 tsp Cinnamon, powder
  • 1/4 tsp Sea salt

How to Make It

1.

Line a 8x8 (or 9x9) square baking pan with parchment paper and set aside.

In a large mixing bowl stir together quick oats, pumpkin seeds, sesame seeds, chopped date and salt (a fork works well to mix everything together).

In a small pot, heat peanut butter and maple syrup over medium-low heat until it just starts to bubble. Cook and whisk for another minute to fully combine and then remove from the heat.

Whisk in the mushroom tincture, maca powder and ground cinnamon.

5.

Pour the mixture into the bowl with the oats, stir to fully combine, making sure most of the oats are coated and are starting to stick together - it can be helpful to use a fork and your hands to combine this mixture.

Scoop or pour the sticky granola mixture into the prepared pan and use your hands or rubber spatula to press the mixture into a firm, even layer.

7.

Refrigerate for at least an hour and then use a sharp knife to cut into 10-12 granola bars. Store in the fridge for up to a week or in the freezer for up to a month.
