Holistic Egg Nog

  • 1 can (400ml) full-fat coconut milk
  • 1 cup unsweetened cashew milk
  • 3 tbsp maple syrup
  • 1 tbsp cashew butter
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • A pinch of ground clove
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • A pinch of salt
  • Ground cinnamon or nutmeg, for dusting
  • Cinnamon stick, for garnish

  1. Warm Base: In a medium saucepan, combine coconut milk, cashew milk, maple syrup, cashew butter, cinnamon, nutmeg, cloves, and sea salt. Heat over medium-low until steaming but not boiling, whisking until smooth.
  2. Whisk Yolks: In a separate bowl, whisk egg yolks until smooth and slightly pale.
  3. Temper Eggs: Slowly ladle about ½ cup of the warm mixture into the yolks while whisking constantly. Repeat once more to prevent curdling.
  4. Thicken Egg Nog: Pour the tempered yolks back into the pot and cook over low heat, stirring continuously, until it lightly coats the back of a spoon, about 5 minutes. Do not boil.
  5. Finish and Chill: Remove from heat, stir in vanilla, and strain into a glass container. Cool, then chill for at least 2 hours
  6. Serve: Mix well before serving. Finish with a cinnamon stick and dust with cinnamon or nutmeg. Enjoy chilled or gently warmed.
