This white bean soup is full of comforting and bright flavours for the season. Wonderful as a weeknight dinner or weekend lunch, or meal prep this soup to enjoy all week long.

2 tbsp extra-virgin olive oil
1 yellow onion, chopped
1 cup chopped carrots
1/2 cup chopped celery
4 cloves garlic, minced
1 tsp kosher salt
1/2 tsp ground pepper
2 tsp dried oregano
1 tsp dried rosemary
1 tsp dried thyme
1/4 tsp cgili flakes
6 cups vegetable broth
2 (14 oz) cans cannellini beans, drained and rinsed
Zest one lemon
juice of half a lemon
3/4 cup freshly grated parmesan cheese, divided
2 cups chopped swiss chard or lacinato (Tuscan) kale

Heat oil in a large pot or dutch oven over medium heat. When the oil is hot, add the onion, carrots and celery and cook, stirring occasionally until softened and starting to brown, about 8-10 minutes.
Add the garlic, salt, pepper, dried oregano, dried rosemary, dried thyme, chili flakes and stir to combine. Cook for 1-2 minutes, until fragrant.
Add the beans and broth and stir to combine. Bring to a boil and once boiling, reduce heat and keep at a simmer for 20 minutes, uncovered.
Stir in the lemon juice and zest and stir to combine, simmer for 2 more minutes.
Remove the soup from the heat and sprinkle ½ cup grated parmesan cheese over the soup, stirring constantly to combine as sometimes the parmesan cheese can clump together. Then, add in the chopped greens of choice if you’re enjoying the soup right away. If saving this soup for meal prep, do not add the greens yet. Stir to combine and let sit a few minutes to wilt the greens.
Serve soup in bowls topped with the rest of the freshly grated parmesan cheese and freshly ground pepper or chili flakes.
For meal prep, divide the soup into 4 meal prep containers and top with greens. Store in the fridge for up to 4 days and reheat as desired. Alternatively, store in one large container in the refrigerator, reheat on the stovetop for lunch or dinner and add greens in just before serving.
