Spicy Cauliflower Rice with Chicken

This easy 30 minute meal is perfect for a quick weeknight dinner! Packed with vegetables and protein, plus a spicy kick, it’s a delicious and healthy dinner idea the whole family will love.

Ingredients

  • 3 tbsp extra virgin olive oil, divided
  • salt and pepper
  • 2x bell peppers, finely chopped
  • 2x small carrots, finely chopped
  • 1x jalapeno, deseeded and finely chopped
  • 450-500g boneless skinless chicken breasts, sliced thin
  • 5 cups frozen riced cauliflower (about 2x 300g packages riced cauliflower)
  • 4x small garlic cloves, minced
  • 1 tsp ground turmeric
  • 3 ½ tsp ground paprika
  • 1 ¾ tsp cumin
  • 1 tsp chili flakes
  • 2 tsp kosher salt
  • ½ tsp ground pepper
  • fresh cilantro for garnish
  • lime wedges for serving

How to Make It
  1. Heat a pan over medium-high heat. Once hot, add 1 tbsp olive oil, finely chopped jalapeno, chopped bell peppers, finely chopped carrots and a pinch of salt and pepper. Cook, stirring frequently, for 4-5 minutes until vegetables are slightly tender and still have a bit of crunch. Remove vegetables to a bowl and set aside.
  2. Turn the pan to medium heat and add 1 tbsp olive oil. Add the chicken and pinches of salt and pepper. Cook until no longer pink and the chicken is cooked through.
  3. Once chicken is cooked, add the vegetables back in and the minced garlic. Stir and cook for two minutes.
  4. Add in the cauliflower rice, 1 tbsp olive oil and all of the seasonings (ground turmeric, ground paprika, ground cumin, chili flakes, kosher salt and ground pepper).
  5. Cook for 6-8 minutes, stirring occasionally, until the cauliflower rice is warmed through.
  6. Remove from the heat and serve immediately topped with fresh cilantro and a squeeze of fresh lime juice.
