This Smashed Cucumber Salad is made with minimal ingredients but packs a ton of flavour! Delicious served as a side salad with burgers or your favourite protein hot off the grill.

For the lemon oregano dressing
3 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
2 tsp red wine vinegar
½ tsp ground pepper
1 tsp kosher salt
½ tsp dried oregano
¼ chili flakes
For the salad
6 Persian cucumbers
½ cup crumbled feta cheese
¼ cup fresh chopped dill
2 ripe avocados, cut into 1 inch chunks
½ small red onion, finely diced
1 jalapeño, seeded and finely diced

Make the dressing by whisking together all of the dressing ingredients and set aside.
Cut the cucumbers in half. Place the cucumber pieces seed side down and lay a large knife flat against the cucumber, and smash it lightly with your other hand. Then, cut the smashed cucumber at an angle into approximately 1 inch pieces. Add the smashed and cut cucumbers to a large bowl.
To the bowl with the cucumbers add the crumbled feta cheese, chopped dill, avocado pieces, finely diced red onion and finely diced jalapeno.
Drizzle everything with the dressing and then gently toss the salad with a spoon to combine. Taste and adjust the seasoning with more salt if desired. Serve immediately or cover and refrigerate until ready to serve (up to 8 hours in the fridge).
Note: While the salad is a great side dish, it also makes the perfect accompaniment to a salmon and rice bowl!
