This Roasted Asparagus Caprese is the most delightful Springtime side dish. Tender asparagus is topped with melty mozzarella cheese and burst tomatoes for a truly delicious bite. A perfect side dish for brunch or dinner!

Ingredients
1 lb asparagus, stalks trimmed
2 tbsp olive oil, divided
1 tsp kosher salt, divided
1 tsp ground pepper, divided
2 cup cherry tomatoes, halved
2 cups shredded mozzarella cheese
1/2 cup balsamic vinegar
2 tbsp bottled balsamic glaze
fresh basil leaves for garnish

How to Make It
Preheat the oven to 425F. To a large baking sheet, add the asparagus to one side of the baking sheet and baby tomatoes to the other side.
Drizzle the asparagus with 1 tbsp olive oil and season with ½ tsp salt and ½ tsp pepper.
Toss each of the vegetables to coat well with the oil and seasonings and then spread out.
Bake for 10 minutes.
Remove from the oven and top the asparagus with all of the shredded mozzarella cheese, spreading out over all of the asparagus spears.
Bake for another 8-12 minutes or until the asparagus is tender, tomatoes are starting to burst and the mozzarella cheese is melted and starting to bubble.
Remove the baking sheet from the oven and gently lift the cheesy asparagus onto a serving platter. Top with the burst tomatoes followed by drizzling over the balsamic glaze and garnish with fresh basil leaves. Serve immediately.
