Calling all chocolate lovers! These upgraded, naturally sweetened brownies are packed with superfoods like goji berries, cacao powder, and chia seeds. A great make-ahead healthy treat this holiday season.

How To Make It
2-1/2 cups dates (pitted)
1-1/2 cup raw walnuts
1/2 cup shredded coconut
1/3 cup cocoa powder
1/4 cup chia seeds
2 tsp vanilla extract
1-1/2 tbsp water
1/2 tsp sea salt
Topping
3/4 cup Semisweet or dark chocolate chips or wafers
1/4 cup chopped cashews
2 tbsp toasted coconut
2tbsp dried goji berries

How To Make It
Toast the coconut by heating on medium-low in a small frying pan for a few minutes, stirring occasionally, until golden brown.
Add pitted dates and walnuts to a food processor. Process until it’s a chunky texture.
Next add in the shredded coconut, cocoa powder, chia seeds, vanilla extract, salt and water. Pulse until everything is combined and the mixture holds together when pinched between two fingers. If needed, add ½ -1 more tablespoon of water and pulse again.
Line a 8x8 pan with parchment paper. Add the date mixture and press down evenly to distribute the date bar in the pan. Set aside.
Melt the chocolate in a small pan over low heat. Stir fairly consistently until fully melted.
Pour the melted chocolate over the bars and then garnish with chopped cashews, toasted coconut and dried goji berries. Place the bars into the freezer for 1 hour to set.
Once they’re set, remove from the freezer and let sit for 5-10 minutes at room temperature before cutting into 12-16 squares. Store in an airtight container in the freezer for up to 1 month.
