How To Make It
  1. Line a small plate with paper towel and then set aside.
  2. To a medium-sized skillet or cast-iron pan, pour in the avocado oil until it measures roughly 1/4 inch deep up the side of your pan. Add one piece of shallot into the oil in the pan, then turn the heat to medium-high and keep an eye on it.
  3. Once the shallot starts to sizzle and has a constant stream of bubbles coming out, add the rest of the thinly sliced shallots and turn the heat to low. Stir them frequently while frying, until golden brown, about 6-8 minutes. Once golden, immediately remove the shallots from the pan with a slotted spoon and place on the paper towel lined plate. Set aside to cool for about 5 minutes (the shallots will continue to crisp up as they sit).
  4. After about 5 minutes, assemble the dip. Spread the french onion dip in a shallow bowl. Top with the crispy shallots and 1-2 tablespoons of minced chives. Serve immediately with chips.
