Homemade Corn Tortillas

Ingredients

  • 2 cups Corn Flour
  • About 1½ cups warm water

Instructions
  1. In a bowl, add 2 cups corn flour andPour in about 1½ cups warm water and mix with your hands until a soft dough forms.
  2. Knead the dough for 1–2 minutes until it becomes smooth. The dough should feel like soft play-dough. If it cracks when you press it, add a little more water. If it feels sticky, add a bit more masa harina.
  3. Cover the dough and let it rest for 10 minutes. This step allows the dough to hydrate and makes the tortillas easier to press.
  4. Divide the dough into 12 golf-ball-sized pieces.
  5. Press each ball between two pieces of parchment paper or plastic using a tortilla press. If you don’t have a press, flatten them with the bottom of a pan.
  6. Heat a dry cast iron skillet or pan over medium-high heat.
  7. Place a tortilla in the hot pan and cook it for 30–45 seconds, flip it and cook another 30 seconds, then flip it one more time for 10–15 seconds until it puffs slightly.
  8. Stack the cooked tortillas in a clean towel to keep them warm while you cook the rest.
  9. Serve warm with the broiled steak and citrus salsa.
