For the chicken

4 boneless, skinless chicken breasts or 6 boneless, skinless chicken thighs
2 tablespoons olive oil
2 chipotle peppers in adobo, chopped
1 tablespoon adobo sauce
3 garlic cloves, minced
Juice of 1 lime
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
Salt and pepper to taste

For the dressing

½ cup mayo
¼ cup sour cream
Juice of 1 lime
2 tablespoons fresh cilantro, chopped
1 tablespoon fresh chives, chopped (optional)
1 garlic clove, minced
Salt and pepper to taste

For the wraps

1 head butter or romaine lettuce, leaves separated
1 large tomato, diced
½ small red onion, thinly sliced

Cook Time 12-15 minutes

In a bowl, combine olive oil, chipotle peppers, adobo sauce, garlic, lime juice, cumin, coriander, smoked paprika, salt, and pepper. Add the chicken and coat it well. Marinate for at least 30 minutes.
Mix the mayo, sour cream, lime juice, cilantro, chives, garlic, salt, and pepper until smooth. Adjust seasoning if needed.
Preheat your grill to medium-high heat. Cook the chicken for 6-7 minutes per side for breasts or 5-6 minutes per side for thighs, until the internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
Lay out the lettuce leaves. Place sliced chicken on top. Add diced tomato and red onion. Drizzle generously with the creamy herb lime dressing.
