A super simple side dish that brings big flavor with barely any cleanup. The greens steam right in the foil with salty olives and creamy feta, then get hit with a tangy herb dressing to bring it all together. Perfect next to grilled chicken, lamb, or anything smoky off the fire.

Tear off a large sheet of foil and pile the greens in the center. Drizzle with 1 tablespoon of olive oil, then sprinkle over the olives, feta, and green onions (if using).
Fold the foil into a tight packet, sealing the edges well so it traps the steam.
Place the packet over medium coals or on a hot grill. Cook for 8–10 minutes, until the greens are wilted and everything’s warmed through.
While that cooks, whisk together the dressing ingredients in a small bowl.
Carefully open the foil (watch for steam), drizzle the dressing over the greens, and toss gently. Serve warm or at room temp.
