Foil-Packed Greens with Feta and Olives

A super simple side dish that brings big flavor with barely any cleanup. The greens steam right in the foil with salty olives and creamy feta, then get hit with a tangy herb dressing to bring it all together. Perfect next to grilled chicken, lamb, or anything smoky off the fire.

For the Dressing

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp Dijon mustard
  • 2 tbsp honey
  • 1 small garlic clove, finely minced
  • Pinch of salt and freshly cracked black pepper
  • Zest of 1 lemon
  • Salt and pepper to taste

  • 4 big handfuls of mixed greens (spinach, kale, chard, or a mix)
  • 3 tbsp olive oil
  • 1/3 cup crumbled feta
  • 1/4 cup pitted Kalamata olives, roughly chopped
  • 2 green onions, thinly sliced (optional)
  • Heavy-duty foil

  1. Tear off a large sheet of foil and pile the greens in the center. Drizzle with 1 tablespoon of olive oil, then sprinkle over the olives, feta, and green onions (if using).
  2. Fold the foil into a tight packet, sealing the edges well so it traps the steam.
  3. Place the packet over medium coals or on a hot grill. Cook for 8–10 minutes, until the greens are wilted and everything’s warmed through.
  4. While that cooks, whisk together the dressing ingredients in a small bowl.
  5. Carefully open the foil (watch for steam), drizzle the dressing over the greens, and toss gently. Serve warm or at room temp.
