Blueberry Apple Salad with Blueberry Basil Vinaigrette

Salad

  • 2/3 cup fresh blueberries
  • 1 apple, thinly sliced
  • 4 cups arugula
  • 1 cup alfalfa sprouts
  • 1/2 cup walnuts, roughly chopped

Blueberry Basil Vinaigrette

  • 1/2 cup fresh blueberries
  • 1/3 cup packed basil leaves
  • 1 tsp raw honey, adjust to taste
  • 1 tsp lemon zest
  • 3 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp of cold water, plus more as needed
  • 1/4 tsp salt, adjust to taste

Prep Time 15 mins
  1. In a blender or using an immersion blender, combine all Blueberry Basil Vinaigrette ingredients. Blend until smooth. If needed, add 1 tsp of water at a time until the vinaigrette is smooth and lightly pourable.
  2. In a large bowl, combine arugula, sliced apples, blueberries, alfalfa sprouts, and walnuts.
  3. Drizzle with vinaigrette just before serving.
  4. Gently toss and serve immediately.
