Melon Cucumber Salad

Ingredients

  • 1/2 cup uncooked quinoa
  • 4 cups melon, chopped 1-inch pieces (mix of cantaloupe and honeydew)
  • 2 cups chopped cucumber, 1/2 inch slices
  • 1/2 cup green olives, chopped if desired
  • 1 cup pieces feta cheese, 1 inch pieces
  • 2 tbsp fresh mint leaves

Dressing Ingredients

  • 1/4 cup olive oil
  • 3 tbsp white wine vinegar
  • 1 1/2 tsp sea salt
  • 1/4 tsp ground pepper
  • 1/4 tsp chili flakes

How to Make It
  1. Cook quinoa according to package instructions and set aside to cool.
  2. Make the dressing: add all of the dressing ingredients to a bowl or a mason jar and whisk or shake to combine. Set aside.
  3. Assemble the salad once the quinoa has cooled by layering the quinoa in a large bowl or on a platter. Next layer the chopped melon and chopped cucumber followed by the olives and feta.
  4. Drizzle the dressing over top of the salad and toss. Top with fresh mint, taste and adjust seasoning with more salt and pepper if desired and enjoy!
