Coffee Chia Seed Pudding

Calling all coffee lovers! Switch up your cup of joe with this delicious and healthy pudding. Have it for breakfast or dessert!

  • 1 cup Tree Island Plain Greek Yogurt
  • 1/2 cup brewed Rosso Coffee, cooled to room temperature
  • 1/4 cup chia seeds
  • 2 tbsp maple syrup
  • 3/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • pinch of salt
  • Toppings: Rawcology Granola, blueberries and/or blackberries

How To Make It
  1. Add everything but the chia seeds to a bowl and whisk together until combined. Then, whisk in the chia seeds and transfer to individual jars or containers (2x 1 cup portions or 4x ½ cup portions). Cover and refrigerate overnight or minimum 2 hours.
  2. When ready to enjoy, give it a quick stir in the morning before topping with granola and berries.
  3. NOTE: If you prefer a stronger coffee flavour, you can make this recipe with ¾ cup coffee and ¾ cup yogurt instead. It will take a bit longer to set, about 3 hours minimum or overnight.
