Holistic Strawberry Matcha Yogurt Bark

Strawberry Vanilla Yogurt Layer

  • 1 1/4 cups unsweetened coconut yogurt or Greek yogurt
  • 1/2 tsp vanilla bean paste
  • 2 tbsp honey
  • 1/2 cup strawberries, finely diced

Matcha Yogurt Swirl

  • 1/4 cup unsweetened coconut yogurt or Greek yogurt
  • 1/4 cup coconut kefir
  • 1 1/2 tsp ceremonial or culinary-grade matcha
  • 1 tsp vanilla bean paste
  • 1 tbsp raw honey

Toppings

  • 1/2 cup freeze-dried sliced strawberries
  • 2 tbsp shelled pistachios, finely chopped
  • 1 tbsp hemp hearts

Cook Time 3-4 hours to freeze
  1. Line a small ⅛ sheet pan (approximately 9 x 6 inch), plate, or container with parchment paper.
  2. To make the strawberry yogurt layer, combine the yogurt, vanilla bean paste, and honey in a medium bowl. Fold in the diced strawberries.
  3. Spread the mixture into an even layer, about 1 cm thick, on the prepared pan.
  4. To make the matcha swirl, whisk together the yogurt, coconut kefir, matcha, vanilla bean paste, and honey until smooth.
  5. Spoon dollops of the matcha mixture over the strawberry yogurt layer. Using the back of the spoon or a butter knife, gently swirl to create a marbled effect.
  6. Sprinkle the freeze-dried strawberries, pistachios, and hemp hearts evenly over the bark.
  7. Freeze for 3 to 4 hours, or until frozen. Let it sit at room temperature for 2 to 3 minutes, then use the parchment to lift the bark from the tray. Transfer to a cutting board and cut into 12 pieces.
