Ancestral Blend Beef Kofta with Pistachio Herb Sauce

Beef Kofta
1 lb ancestral blend ground beef (10%)
3 green onions, finely chopped
1 medium zucchini, finely grated and squeezed dry
1/4 cup parsley, finely chopped
1/4 cup cilantro, finely chopped
1 tsp garlic powder
1 tsp ground cumin
1 tsp ground coriander
2 tsp paprika
1/2 tsp ground allspice
1 tsp lemon zest
1 tbsp lemon juice
1 egg
1 tsp salt
Lemon wedges, to serve
Pistachio Herb Sauce
1/2 cup pistachios
1/2 cup parsley, loosely torn and packed
1/4 cup cilantro, loosely torn and packed
1/4 mint leaves, packed
3 tbsp lemon juice
1/4 cup extra virgin olive oil
1/2 tsp chili flakes
1/2 tsp salt

Preheat the oven to 400°F and line a baking tray.
In a bowl, mix all kofta ingredients gently until just combined.
Shape the mixture into oval kofta, about 1 tbsp each, and arrange evenly on the prepared tray.
Bake for 10-15 minutes, or until internal temperature reaches 71°C (160°F).
Switch oven to broil on high and broil for 3 to 5 minutes, until lightly browned and caramelized on the outside. Watch closely to prevent burning.
For the sauce, finely chop all ingredients or pulse in a food processor until textured and well combined.
Serve warm with pistachio herb sauce and lemon wedges.
