Beef Kofta
- 1 lb ancestral blend ground beef (10%)
- 3 green onions, finely chopped
- 1 medium zucchini, finely grated and squeezed dry
- 1/4 cup parsley, finely chopped
- 1/4 cup cilantro, finely chopped
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp paprika
- 1/2 tsp ground allspice
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 egg
- 1 tsp salt
- Lemon wedges, to serve
Pistachio Herb Sauce
- 1/2 cup pistachios
- 1/2 cup parsley, loosely torn and packed
- 1/4 cup cilantro, loosely torn and packed
- 1/4 mint leaves, packed
- 3 tbsp lemon juice
- 1/4 cup extra virgin olive oil
- 1/2 tsp chili flakes
- 1/2 tsp salt
- Preheat the oven to 400°F and line a baking tray.
- In a bowl, mix all kofta ingredients gently until just combined.
- Shape the mixture into oval kofta, about 1 tbsp each, and arrange evenly on the prepared tray.
- Bake for 10-15 minutes, or until internal temperature reaches 71°C (160°F).
- Switch oven to broil on high and broil for 3 to 5 minutes, until lightly browned and caramelized on the outside. Watch closely to prevent burning.
- For the sauce, finely chop all ingredients or pulse in a food processor until textured and well combined.
- Serve warm with pistachio herb sauce and lemon wedges.
