Ancestral Blend Beef Kofta with Pistachio Herb Sauce

Beef Kofta

  • 1 lb ancestral blend ground beef (10%)
  • 3 green onions, finely chopped
  • 1 medium zucchini, finely grated and squeezed dry
  • 1/4 cup parsley, finely chopped
  • 1/4 cup cilantro, finely chopped
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp paprika
  • 1/2 tsp ground allspice
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 egg
  • 1 tsp salt
  • Lemon wedges, to serve

Pistachio Herb Sauce

  • 1/2 cup pistachios
  • 1/2 cup parsley, loosely torn and packed
  • 1/4 cup cilantro, loosely torn and packed
  • 1/4 mint leaves, packed
  • 3 tbsp lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp chili flakes
  • 1/2 tsp salt

Total Time 35-40 mins
  1. Preheat the oven to 400°F and line a baking tray.
  2. In a bowl, mix all kofta ingredients gently until just combined.
  3. Shape the mixture into oval kofta, about 1 tbsp each, and arrange evenly on the prepared tray.
  4. Bake for 10-15 minutes, or until internal temperature reaches 71°C (160°F).
  5. Switch oven to broil on high and broil for 3 to 5 minutes, until lightly browned and caramelized on the outside. Watch closely to prevent burning.
  6. For the sauce, finely chop all ingredients or pulse in a food processor until textured and well combined.
  7. Serve warm with pistachio herb sauce and lemon wedges.
