Pineapple and Maple Ham

This Pineapple and Maple Ham is everything you want in a centerpiece it’s sweet, savory, and perfectly glazed. The maple syrup gives it a deep caramel flavor while the pineapple adds brightness and just the right touch of acidity. As the ham roasts, the pineapple rings turn golden and sticky, soaking up that maple glaze and filling the kitchen with an incredible smell. It’s simple, comforting, and feels like something special whether you’re cooking for a small gathering or a holiday meal.

For the glaze

  • 1⅓ cups pineapple juice
  • ¼ cup maple syrup
  • 1 tsp grated orange zest
  • ¼ cup orange juice
  • 2 tbsp brown sugar
  • 1 tsp Dijon mustard

For the ham

  • 4 lb fully cooked ham
  • 6–8 pineapple slices (fresh or canned rings)
  • Optional: maraschino cherries (1 per ring)
  • Toothpicks for securing

For the optional pan sauce

  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup pan juices (plus water or pineapple juice to make 1 cup total, if needed)

  1. In a small saucepan, combine the pineapple juice, ¼ cup maple syrup, orange zest, orange juice, brown sugar, and mustard.
  2. Bring to a boil over medium-high heat, stirring until the sugar dissolves (about 5 minutes). Reduce to medium-low and simmer until it thickens slightly and coats the back of a spoon — about 15–20 minutes.
  3. Remove from heat and let cool slightly.
  4. Preheat the oven to 325°F (160°C).
  5. Place the ham, in a roasting pan.
  6. Brush half of the glaze evenly over the ham.
  7. Arrange pineapple slices over the top and sides of the ham, securing each with a toothpick. Cover loosely with foil.
  8. Roast the ham for about 1 hour 15 minutes, or until the internal temperature reaches 130°F (55°C).
  9. Increase oven temperature to 375°F (190°C). Uncover the ham and brush with more glaze, including over the pineapple slices.
  10. Roast uncovered for another 20–30 minutes, basting every 10 minutes, until the glaze is caramelized and the ham reaches 140°F (60°C) inside.
  11. Remove the ham from the oven and let it rest for 15 minutes before slicing.
