Holiday Spiced Chocolate Truffles

Truffle Base

  • 225g Bittersweet Chocolate Chips (71% cacao)
  • 1/2 cup full fat coconut milk
  • 1 tbsp coconut oil
  • 1 tbsp raw honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp fine salt

Holiday Spice Blend

  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • A pinch of ground clove
  • Zest of 1/2 orange

Coating

  • 2 tbsp cacao powder
  • 2 tbsp shredded coconut

  1. Melt the chocolate: Place the chocolate chips in a heatproof bowl and set aside.
  2. Warm the mixture: In a small pot, combine the coconut milk, coconut oil, raw honey, vanilla extract, salt, and all the spices. Heat gently over medium heat until hot and steaming. Do not let it boil.
  3. Combine and stir: Pour the hot mixture over the chocolate. Let it sit for 2 to 3 minutes, then slowly stir from the center outward until smooth and glossy. Stir in the orange zest if using.
  4. Chill: Cover the bowl and refrigerate for about 1 to 1½ 2 hours, until the mixture is firm but scoopable
  5. Shape the truffles: Line a tray or large plate with parchment paper. Scoop about 1 tablespoon of the mixture and roll into balls using your hands. Work quickly, as the mixture will soften while rolling
  6. Coat: Roll half of the truffles in cocoa powder and the other half in shredded coconut.
  7. Set and store: Place the coated truffles on the prepared parchment-lined tray and refrigerate for 15 to 20 minutes to set. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 1 month.
