Chickpea Salad

  • 1 can (400g) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp paprika
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt to taste

Grilled Chicken

  • 2 chicken breasts, pounded to even thickness
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp mustard
  • 1/2 tsp paprika
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and pepper to taste

Bowl

  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved

Yogurt Dressing

  • 500 g Greek yogurt
  • 2 tbsp white wine vinegar
  • 4 cloves garlic, crushed
  • 2 tbsp olive oil
  • Salt to taste

How To Make It
  1. In a bowl, combine the chickpeas, olive oil, parsley, paprika, lemon juice, lemon zest, and salt. Mix well and set aside to allow the flavors to meld.
  2. In a small bowl, mix olive oil, garlic powder, mustard, paprika, lemon juice, salt, pepper, and oregano.
  3. Rub the marinade over the chicken breasts and let them sit for at least 15 minutes.
  4. Heat a grill pan or outdoor grill to medium-high. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest for a few minutes, then slice.
