Pear Baked Oatmeal

Ingredients

  • 1 1/3 cups almond or other milk of choice
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 2 eggs
  • 2 tbsp unsalted butter, melted and slightly cooled
  • 3 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 2 tbsp ground flaxseed
  • 3 cups old fashioned rolled oats (gluten free if desired)
  • 1 1/2 cups ripe diced Bartlett or Anjou pears (about 2 medium pears)
  • Optional: pear slices for topping

Pecan crumble topping:

  • 4 tbsp coconut palm sugar (or substitute with brown sugar
  • 4 tbsp packed almond flour
  • 2 tsp ground cinnamon
  • 1/2 cup chopped pecans
  • 2 tbsp softened unsalted butterpinch of salt

How to Make It
  1. Preheat the oven to 375F. Grease a 9x9 baking dish with cooking spray of choice or butter.
  2. Make the pecan crumble topping by whisking together the coconut palm sugar, almond flour, cinnamon, chopped pecans and pinch of salt in a small bowl. Add the softened butter and mix it up using a fork or your fingertips until the butter is fully incorporated. You should have small crumbles. Set aside.
  3. To a large mixing bowl add milk, maple syrup, vanilla extract, eggs, melted butter, ground cinnamon, ground nutmeg, ground allspice, salt and baking powder. Whisk until the eggs are fully combined. Then, add in the ground flaxseed, oats and diced pear and stir to combine.
  4. Pour the entire mixture into the greased baking dish and top with the pecan crumble and fresh pear slices if desired. Bake for 40-50 minutes or until the oats have set.
  5. Let sit for 15-20 minutes before serving topped with coconut-vanilla or regular vanilla ice cream, maple syrup and/or another sprinkle of cinnamon and extra chopped pecans.
  6. You can also make this ahead of time and reheat in the oven or toaster oven at 350F for 5-10 minutes or until warmed through.
