‘PB & J’ Baked Oat Bars

These ‘PB & J’ Baked Oat Bars are made with whole food ingredients and are perfect for meal prep! The classic combination of peanut butter and jam hits the spot for a quick snack or as a part of a wholesome breakfast.

  • 2 medium bananas, mashed (about 1 cup mashed)
  • 6 tbsp creamy natural organic peanut butter (Everland)
  • ¼ cup pure maple syrup
  • ¼ cup almond milk (Elmhurst) or other milk of choice
  • 1 tbsp vanilla extract
  • 1 cup organic rolled oats (Stoked Oats)
  • 1/2 cup oat flour
  • ¼ cup ground flaxseed
  • 1/4 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp sea salt

Toppings

  • 3-4 tbsp creamy natural organic peanut butter (Everland)
  • 3-4 tbsp organic strawberry jam (Crofter’s Strawberry Jam)

How To Make It
  1. Preheat the oven to 350F and line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl add the bananas and mash them up until they are well-broken down. Add the peanut butter, maple syrup, almond milk and vanilla extract and stir well to combine.
  3. Next add the rolled oats, oat flour, ground flaxseed, ground cinnamon, baking powder and sea salt and stir until everything is combined.
  4. Pour the mixture into the prepared baking pan and smooth out the top. Dollop the top with 3-4 tablespoons of peanut butter and 3-4 tablespoons of jam. Then, use the tip of a knife to swirl the peanut butter and jam all over the top of the bars.
  5. Bake for 28-32 minutes until set - the edges of the bars should start to pull away from the parchment paper and are just starting to turn golden brown.
  6. Let fully cool before removing from the pan and cutting into squares.
