How To Make It
Make the crostini: Preheat the oven to 375F and line a baking sheet with parchment paper. Place the ½ inch slices of baguette on the baking sheet. Brush both sides with olive oil. Bake for 5 minutes, flip and bake for another 5 minutes. Remove the crostini to a serving tray and set aside.
Toast the walnuts: Add the walnuts to the baking sheet and toast for 5 minutes. Remove and set aside.
Mix the goat cheese: In a small bowl mix together the softened goat cheese with a pinch of pepper and 1 tbsp honey until combined.
Make the apples: Add 1 tbsp butter to a medium frying pan and turn to medium heat. Add the apple slices and cook for 3-5 minutes until just softened. Turn to medium-low heat, add 1 tbsp honey, minced fresh thyme leaves, lemon juice and a pinch of salt. Stir to combine and set aside to cool slightly.
Assemble the crostini: Divide the goat cheese mixture evenly between the 16 crostini, spreading a dollop on each. Next divide honey apple slices between the crostini, on top of the goat cheese layer, followed by fresh thyme leaves for garnish, chopped walnuts and a drizzle of honey if desired.
