  • 3/4 cup raw almonds
  • 3/4 cup raw cashews
  • 3/4 cup raw pecans
  • 3/4 cup raw walnuts

Seasoning Blend

  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp finely chopped fresh rosemary
  • 1 tsp finely chopped fresh thyme
  • 1/2s tsp finely chopped fresh sage

  1. Preheat oven: Set oven to 325°F (160°C) and line a baking sheet with parchment paper
  2. Combine nuts: In a large bowl, mix almonds, cashews, pecans, and walnuts
  3. Make the seasoning: In a small bowl, whisk together olive oil, salt, onion powder, garlic powder, smoked paprika, rosemary, thyme, and sage.
  4. Coat: Pour the herb mixture over the nuts and toss well to ensure even coating.
  5. Roast: Spread in a single layer on the baking sheet. Roast for 20–25 minutes, stirring halfway through, until fragrant and golden.
  6. Cool: Let cool completely on the tray; the nuts will crisp as they cool.
  7. Store: Keep in an airtight container at room temperature for up to 2 weeks, or refrigerate for longer freshness.
