Grille Halloumi & Peach Skewers

  • 4 peaches (or nectarines), cut each peach into 8 pieces
  • 400g halloumi, cut into 1" pieces
  • 1 large red onion, cut into 1" pieces
  • 3 tbsp olive oil (plus extra to drizzle over the salad greens)
  • 1 lemon, juiced
  • 3/4 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 tbsp honey or maple syrup
  • Big pinch of salt and pepper
  • 4-6 cups mixes salad greens for serving
  • 6-8 wooden skewers, soaked in water

  1. Pre-heat the barbeque to medium-high heat, about 375-400F.
  2. In a large bowl make the marinade by whisking together the olive oil, juice of one lemon, dried oregano, garlic powder, honey and a big pinch of both salt and pepper until combined. Add the peach pieces, cubed halloumi and onion pieces to the bowl and toss to combine.
  3. Divide and skewer the peach slices, halloumi and red onion over 6-8 skewers. Save any of the marinade for basting while grilling.
  4. Oil the grill and cook the skewers on the barbeque, cooking about 2-3 minutes per side and brush with any leftover marinade when you turn the skewers, about 8-10 minutes total.
  5. Serve skewers with fresh salad greens dressed with a drizzle of olive oil and lemon juice.
