Gluten & Dairy Free Lemon Poppyseed Pancakes

These gluten and dairy free Lemon Poppyseed Pancakes are a nourishing twist on a classic. Light, fluffy, and made with simple ingredients, they are perfect for meal prep. Almond flour provides healthy fats and protein, oat flour adds gentle whole grain fibre, and chia seeds support digestion with omega-3’s. Mineral-rich poppy seeds bring calcium, iron, and their signature nutty crunch, while fresh lemon keeps the flavour bright and balanced!

Wet

  • 2 large eggs, room temperature
  • ⅓ cup unsweetened milk of choice
  • 1 tsp alcohol free vanilla extract
  • 1 tbsp poppy seeds
  • 1 tbsp chia seeds
  • 2 tbsp maple syrup
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 2 tbsp avocado oil or melted coconut oil, plus extra for cooking

Dry

  • ¾ cup almond flour
  • ½ cup gluten free oat flour
  • ¼ cup tapioca flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
Servings 8 pancakes (¼ cup per pancake)
Prep Time 10 Minutes
Cook Time 10 - 15 Minutes
Total Time 20 -25 Minutes
Instructions
  1. In a large bowl, whisk all wet ingredients until smooth.
  2. Add all dry ingredients and whisk until fully combined. Rest the batter for 5 to 7 minutes.
  3. Heat a large pan over medium heat and allow it to fully preheat.
  4. Generously grease with about 1 tsp oil. Place ¼ cup of batter onto the pan and cook for about 1½ minutes, or until the bottom is golden and the pancake has set.
  5. Flip and cook until cooked through. Add about ½ teaspoon oil between batches as needed.
  6. Enjoy with fresh fruit and your favourite maple syrup.
Chefs note:
  1. Give your pancakes space in the pan and cook in batches as needed. Keep the heat at medium so they cook through evenly, and resist the urge to rush. Adjust the heat as needed, if the pan is too hot; the outside will brown before the centre has time to set.
  2. These pancakes are great for meal prep. Store in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months with parchment paper between each pancake.
