Coconut and Peach Popsicles

What better way to beat the health this summer with a delicious and nutritious popsicle! This protein and collagen rich popsicle is great for joint and muscle support for all of your outdoor activities. Peaches and ginger are a great source of antioxidants and help to lower inflammation.

Ingredients

  • 2 1/2cups frozen peaches
  • 1can / 400ml coconut milk
  • 1 inch fresh ginger
  • 2 tbsp maple syrup
  • 2 scoops Genuine Health Collagen
  • 10 tbsp plain greek yogurt, unsweetened
  • 2 tbsp granola of your choice
  • 2 tbsp Manitoba Harvest hemp hearts
  • (mix hemp hearts and granola together)

Prep Time 10 minutes
Cook Time Freeze for 6 hours or overnight
How to Make It
  1. To a blender add frozen peaches, coconut milk, ginger, maple syrup, collagen and juice of 1 lime. Blend until smooth
  2. Fill popsicle molds halfway. Add in ½-1 tbsp yogurt per popsicle and use a toothpick or popsicle stick to swirl it in a bit. Fill most of the rest of the way of the mold with the peach popsicle mixture, leaving a little room at the top and then top with 1 tsp of granola hemp hearts mixture. Press the granola-hemp hearts into the popsicle a little bit and then insert the popsicle sticks.
  3. Freeze for at least 6 hours or overnight.
