For the chicken
450 grams chicken breasts
1 tablespoon extra-virgin olive oil
1 ½ tsp kosher salt
¾ tsp garlic powder
¾ tsp onion powder
½ tsp ground pepper
For the chicken salad
4 cups cooked shredded chicken
⅓ cup finely chopped red onion
1 cup finely chopped celery
½ cup quartered red or green grapes
3 tbsp fresh minced dill
½ cup mayonnaise
½ cup plain Greek yogurt
1 tsp kosher salt
½ tsp ground pepper
1 tbsp fresh lemon juice
⅓ cup toasted chopped or sliced almonds
For serving
1 cup sprouts
Sourdough, rye or baguette bread, sliced
2 types of crackers
1 small cucumber, sliced into thick slices
6 radishes, halved or quartered
2-3 medium carrots, cut into sticks

Make the chicken salad
If using pre-cooked shredded chicken, skip to step 5. If cooking your own chicken, preheat the oven to 400F and line a baking sheet with parchment paper.
Season the chicken breasts with 1 tbsp of olive oil, making sure to drizzle over all chicken breasts. In a small bowl mix together the salt, garlic powder, onion powder and ground pepper. Then, season both sides of the chicken breasts with this mixture, dividing evenly between them.
Bake the chicken breasts for 22-26 minutes or until the internal temperature reaches 165F. Set aside to cool.
Once the chicken breasts are cool enough to handle, use two forks to shred the chicken and set aside in a bowl to cool further.
5. When fully cooled, make the chicken salad by combining the shredded chicken with finely chopped red onion, finely chopped celery, quartered green grapes, fresh dill, mayonnaise, Greek yogurt, salt, pepper, fresh lemon juice and toasted almonds. If using preshredded chicken, add in ¼ tsp onion powder and ¼ tsp garlic powder as well. Stir until fully incorporated and taste. Adjust seasoning with more salt and pepper if desired.
Assemble the sharing board
To create the sharing board, start by placing a small-medium sized bowl of chicken salad and small bowl of sprouts on a large wooden board.
Then start to fill in with crackers, slices of bread and fresh vegetables.
