Brain Power Granola Bars

These chewy and delicious granola bars pack a powerful punch! Loaded with healthy fats and nutrients that support brain health, be sure to double the batch because they will go quick. A overall great school or after school snack!

Ingredients

  • 2/3 cups unsalted raw almond butter, or peanut butter (can replace with your favourite nut/seed butter)
  • 2/3 cups date paste (1 cup of tightly packed dates + 1/4 cup of water)
  • 1 tbsp coconut oil
  • 2 cups rolled oats
  • 2/3 cups tigernut flour (can replace with almond or oat flour)
  • 2 tbsp raw almonds, roughly chopped
  • 2 tbsp black chia seeds
  • 2-3 tbsp dark chocolate chips
  • 1/2 cup dried, unsweetened blueberries
  • 1/3 cup unsweetened shredded coconut
  • 1 tsp alcohol free vanilla extract
  • 1/2 tsp ground cinnamon
  • pinch of sea salt

How to Make It
  1. Line an 8x8 inch pan with parchment paper.
  2. To make date paste, blend dates with water in a food processor until combined. Set aside.
  3. In a pot, melt nut butter and coconut oil over medium-heat until the mixture has thinned out, stirring constantly. Lower the heat and simmer for about 2 minutes.
  4. Add date paste, vanilla, cinnamon and salt to the pot and simmer for another 2 minutes or until mixture has combined. Fold in oats, chia seeds, shredded coconut, and chopped almonds.
  5. Transfer the mixture into the lined pan and spread out evenly with a spatula. Add chocolate chips on top and gently press into the mixture.
  6. Place the pan in the fridge for about 1 hour to set. When the mixture has hardened, remove from the pan, and slice into bars.
  7. Store bars in fridge or freezer until ready to eat. Enjoy!
