Beet Greens Pesto

Don't throw away those beet greens! Not only are they super nutritious, they can be used for so many things - including a delicious pesto. Perfect for pasta or a dip!

Ingredients

  • 2 cups beet tops and stems
  • 1/3 cup pine nuts, or any seed if you are nut free
  • 2 garlic cloves
  • 1 handful of fresh basil
  • 1/2 cup extra virgin olive oil or avocado oil
  • 1/2 cup parmesan cheese
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
Servings 4-6
Prep Time 10 minutes
Total Time 10 minutes
How to Make It
  1. Wash, dry (make sure they are pretty dry), and cut beat greens into small chunks/pieces.
  2. Add all ingredients to a food processor and blend until desired consistency (add more olive oil if needed).
  3. Serve over pasta or use as a dip with fresh veggies.
