Don't throw away those beet greens! Not only are they super nutritious, they can be used for so many things - including a delicious pesto. Perfect for pasta or a dip!

Ingredients
2 cups beet tops and stems
1/3 cup pine nuts, or any seed if you are nut free
2 garlic cloves
1 handful of fresh basil
1/2 cup extra virgin olive oil or avocado oil
1/2 cup parmesan cheese
1/8 teaspoon salt
1/8 teaspoon pepper

How to Make It
Wash, dry (make sure they are pretty dry), and cut beat greens into small chunks/pieces.
Add all ingredients to a food processor and blend until desired consistency (add more olive oil if needed).
Serve over pasta or use as a dip with fresh veggies.
