No Bake Vegan Cheesecake Cups

Filling/Crust Ingredients

  • 1 227g/8 oz package plain vegan cream cheese
  • 1/2 cup full fat coconut milk
  • 1/4 cup lemon juice
  • 1 tsp pure vanilla extract
  • 1 1/4 cup vegan granola of your choice

Topping Ingredients

  • 2 cups chopped stone fruit (peaches, nectarines, apricots, cherries and/or plums)
  • 2 tsp maple syrup
  • 1/4 tsp ground cinnamon

How to Make It
  1. Make the cheesecake filling: In a high speed blender blend all of the filling ingredients until smooth and creamy.
  2. Divide the granola between the 6 cups, scooping into the bottom of each cup. Pour the filling on top of the granola layer. Set in the fridge overnight to set (they will be set just to the touch, make sure to keep in the fridge until just before serving).
  3. In a small bowl add the chopped fruit, syrup or ground cinnamon and let sit in the fridge in an airtight container until the cheesecake cups are set.
  4. Before serving, top each of the cheesecake layers with the fresh fruit and garnish with fresh mint if desired.
