Berries and Peach Cobbler

Filling Ingredients

  • 2 cups blueberries, frozen
  • 2 cups strawberries, frozen
  • 1 tablespoon vanilla
  • 2 tablespoon corn starch
  • 1/2 cup swerve brown sugar or alternative
  • 1 lemon zested

Topping Ingredients

  • 1 cup oats
  • 1 cup oat flour
  • 1/2 cup cold butter, cubed
  • 1 teaspoon salt
  • 3/4 cup swerve brown sugar or alternative

Cook Time 1 hour 30 minutes
Total Time 1 hour 45 minutes
How to Make It
  1. Preheat oven to 350F.
  2. In a bowl mix all the filling ingredients and place aside.
  3. In a second bowl mix the topping ingredients and work mixture with your fingertips until pea-sized lumps form.
  4. Place the filling in a greased oven-safe dish and add topping. Place in the oven, uncovered, for 45 minutes to 1 hour until bubbling and golden brown.
  5. Let cool for 20 minutes and serve warm.
