Fibre Loaded Shepherds Pie

This cozy shepherd’s pie layers savoury ground lamb, fibre rich lentils and vegetables with a creamy sweet potato topping. It is full of flavour, naturally rich in protein, fibre, iron, beta carotene and nourishing complex carbohydrates. This dish is a very balanced, meal prep friendly take on classic comfort food!

Sweet Potato Topping

  • 2½ lb orange sweet potatoes, peeled and cut into roughly 1 inch cubes
  • 1 tbsp ghee
  • 1 tsp salt

Lamb & Lentil Filling

  • 1 lb ground lamb
  • 1 small yellow onion, diced
  • 1 tbsp minced garlic
  • 2 tbsp tomato paste
  • ½ tsp chili flakes, adjust to taste
  • 540 mL (19 fl oz) green lentils, drained and rinsed
  • ¾ cup low sodium beef stock or water
  • 1 tbsp fresh rosemary, chopped
  • 1½ tsp salt
  • 1½ cups frozen classic mixed vegetables

Instructions
  1. Place the sweet potatoes in a steamer basket over simmering water. Cover and steam for about 25 minutes, or until fork tender. Prepare the remaining ingredients while they steam.
  2. Transfer the sweet potatoes to a large bowl. Add the ghee and ½ tsp salt, then mash until smooth. Set aside.
  3. Heat a 12 inch oven safe skillet over high heat. Crumble in the ground lamb and cook undisturbed for 3 minutes. Stir, break apart and cook for another 2 minutes.
  4. Reduce the heat to medium high. Add the onion, garlic, tomato paste and chili flakes. Cook for 4 minutes, stirring occasionally and scraping up the browned bits from the skillet.
  5. Add the lentils, beef stock, rosemary and 1½ tsp salt. Stir well, scraping up any browned bits from the bottom of the skillet. Cook for 4 minutes, stirring occasionally. Stir in the frozen vegetables. Remove from the heat. Transfer the filling to an oven safe dish if your skillet is not oven safe.
  6. Turn the broiler on high (500°F). In the meantime, spoon the sweet potato mash evenly over the filling. Smooth to the edges and create shallow ridges across the surface with the edge of your spatula or a fork.
  7. Broil 6 to 8 inches from the heat for 20-25 minutes, watching closely, until the sweet potato is lightly browned and caramelized. Rest for 5 to 10 minutes before serving.
Chef’s Notes
  1. Skip the extra oil when browning the lamb. Ground lamb naturally renders enough fat to cook in and develop a deep sear.
  2. Broilers vary by oven. Watch the topping closely and adjust the broiling time as needed.
  3. Feel free to substitute other potatoes for the topping. Broiling time may vary depending on the variety, so watch closely.
  4. Making it ahead? Cool the lamb and lentil filling before stirring in the frozen vegetables. Assemble and refrigerate, then bake at 375°F for 25 to 30 minutes, or until heated through, and broil for 5 to 10 minutes to brown the top.
