This Sheet Pan Salmon Bowl is an easy, high-protein meal that comes together with just a handful of convenience ingredients. Roasted salmon, sweet peppers, and onions are served over fresh greens and French lentils, then finished with a bright lemon herb dressing. It's a simple way to get plenty of protein, fibre, and vegetables on the table with minimal prep.

Ingredients

  • 2 salmon fillets (about 5–6 oz each)
  • 1 package pre-cut pepper and onion mix
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 4 cups mixed greens
  • 1 package Green Bowl French Lentils
  • 1/4 cup Salad Girl Lemon Herb Dressing

Instructions
  1. Preheat oven to 400°F.
  2. Place the salmon fillets on a sheet pan and arrange the pepper and onion mix around them.
  3. Drizzle everything with olive oil and season generously with salt and pepper.
  4. Roast for 15 minutes, or until the salmon reaches an internal temperature of 145°F and the vegetables are tender.
  5. Divide the mixed greens between two bowls.
  6. Add the French lentils on top of the greens.
  7. Spoon the roasted peppers and onions into each bowl.
  8. Flake the salmon into large pieces and place over the vegetables.
  9. Drizzle with the lemon herb dressing and serve immediately.
