Olive oil
Salt
Butter (high quality, like Foothills Creamery)
1 can sardines (Nice Cans works well)
1/4 red onion, thinly sliced
1 lemon
Fresh dill, chopped
Maldon salt (or flaky salt)

Slice your sourdough and drizzle lightly with olive oil. Season with a pinch of salt.
Grill or toast the bread until it’s golden and lightly charred on the edges.
Spread a generous layer of butter over the warm toast so it melts right in.
Top with sardines, breaking them slightly so they sit evenly on the bread.
Add thin sliced red onion, a good squeeze of fresh lemon juice, and plenty of fresh dill.
Finish with a pinch of flaky Maldon salt and serve right away.
Optional
Add sliced cucumber or pickled onions if you want extra crunch and acidity.
