Snack plates are the best quick and easy lunch! With a mix of salty, sweet, crunchy and dippy (dips), these are delicious and easy to put together.

Ingredients
¼ English cucumber, sliced
4 - 5 slices cooked chicken
1x granny smith apple, sliced
1x mandarin orange, peeled
1 serving carrot sriracha hummus (or other hummus of choice)
1 serving puffs, popcorn or other crunchy snack of choice
4 dates
2 small pieces of manchego cheese plus more if desired
3 - 4 tablespoons of roasted almonds
Nut butter of choice
Squares of functional chocolate
Garnishes: fresh thyme, hot honey, salt, pepper

Instructions
Arrange the cucumber slices, sliced chicken, apple slices and mandarin orange pieces on a plate.
Add a serving of hummus and a crunchy snack of your choice.
Next stuff 2 dates each with a piece of manchego and an almond. Stuff the other 2 dates with nut butter and a piece of functional chocolate in each. Add the stuffed dates to the plate along with more slices of manchego cheese if desired.
Drizzle the manchego-stuffed dates with hot honey if desired and garnish them with fresh thyme leaves. Next add a pinch of salt and pepper to the cucumbers.
