Turkey & Carrot Breakfast Patties

  • 1 lb ground turkey thigh or your choice of ground meat
  • 2 large carrots (about 2 cups), finely shredded
  • 2 green onions, finely chopped
  • 2 tbsp ground flaxseed, or 1 egg
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp fresh thyme leaves, or ½ teaspoon dried thyme
  • 2 tsp pure maple syrup

  1. Preheat Oven: Set to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Mix: In a large bowl, add all ingredients and mix gently until combined.
  3. Shape: Form into 10 equal patties, then place them on the prepared baking sheet.
  4. Cook: Bake for 12-15 minutes, or until internal temperature reaches 165°F.
  5. Rest and Serve: Let rest for a few minutes before serving.

  1. A food processor makes prep quick and easy. Use the fine shredding attachment for the carrots and give the green onions a quick blitz before mixing.
  2. These patties are freezer friendly and reheat beautifully. To freeze, let the patties cool completely, then layer between pieces of parchment paper to prevent sticking.
