Grilled Broccolini Caesar Salad

Ingredients

  • 1 bunch broccolini
  • Olive oil
  • Salt
  • 4–5 slices bacon
  • Croutons
  • Shaved Parmesan
  • 1 cup mayonnaise
  • 1 teaspoon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 2–3 tablespoons freshly grated Parmesan cheese
  • 1–2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste

  1. Line a sheet pan with parchment paper and lay the bacon strips flat. Place the pan in a cold oven, then set it to 400°F. Let the bacon cook for 25–30 minutes, flipping halfway through, until crisp or to your liking. Transfer to paper towel to cool, then chop into bite-sized pieces.
  2. Trim the broccolini ends and drizzle with olive oil. Season generously with salt and grill over medium-high heat for 5–7 minutes, turning occasionally, until lightly charred and tender. Let cool slightly, then chop into bite-sized pieces.
  3. In a bowl, whisk together the mayonnaise, mustard, Worcestershire sauce, lemon juice, Parmesan, and minced garlic. Season with salt and pepper to taste and stir until smooth and creamy. Chill until ready to use.
  4. Add the chopped grilled broccolini to a large bowl and toss with some of the Caesar dressing until evenly coated. Plate the salad and top with chopped bacon, croutons, and shaved Parmesan. Finish with a little cracked black pepper or an extra squeeze of lemon if you like.
