Maple Ginger Carrots

  • 2 lbs carrots, peeled and sliced on a bias
  • 1 tbsp ghee or butter
  • 1 tbsp finely grated fresh ginger
  • 2 tbsp pure maple syrup
  • 2 tbsp of chopped curly parsley, plus extra for garnish
  • 2 tsp lemon juice
  • 1/2 tsp salt

  1. Prepare carrots: Peel and slice carrots on a bias for even cooking.
  2. Cook: Heat ghee in a large skillet over low heat. Add grated ginger and sauté for 30 seconds until fragrant.
  3. Glaze: Add carrots and toss to coat. Pour in maple syrup, salt, and 2 tablespoons of water. Cover and cook on medium for 10–12 minutes, stirring occasionally, until carrots are tender.
  4. Finish: Remove lid and stir in lemon juice and parsley.
  5. Garnish: Transfer to a serving dish and top with chopped parsley. Serve warm.
