Ingredients
- 3-4 cups baby arugula
- 1 avocado, cubbed
- 1 small red onion, thinly sliced
- 2 mini cucumbers, sliced (or 1/2 an english cucumber)
- a handful of pea shoots or sunflower sprouts
- a handful of cilantro, choppedsalt & pepper to taste
- 6 ripe strawberries, hulled
Creamy Sesame Dressing:
- 2 tablespoons raw tahini
- 1 tablespoon coconut aminos
- 1 1/2tablespoons apple cider vinegar
- 1 tablespoon sesame oil
- 1 tablespoon roasted sesame oil
- 1-2 pinches dry ginger
- splash of mirin cooking wine (optional)
How to Make It
- Prepare salad items and place in a bowl.
- Whisk together dressing ingredients.
- Toss in with salad.
- Also pairs well with grilled prawns or salmon.
