Arugula, Avocado and Strawberry Salad
Fresh and summery with a peppery bite!

Ingredients
3-4 cups baby arugula
1 avocado, cubbed
1 small red onion, thinly sliced
2 mini cucumbers, sliced (or 1/2 an english cucumber)
a handful of pea shoots or sunflower sprouts
a handful of cilantro, choppedsalt & pepper to taste
6 ripe strawberries, hulled
Creamy Sesame Dressing:
2 tablespoons raw tahini
1 tablespoon coconut aminos
1 1/2tablespoons apple cider vinegar
1 tablespoon sesame oil
1 tablespoon roasted sesame oil
1-2 pinches dry ginger
splash of mirin cooking wine (optional)

How to Make It
Prepare salad items and place in a bowl.
Whisk together dressing ingredients.
Toss in with salad.
Also pairs well with grilled prawns or salmon.
