Anti Inflammatory Popsicles

Cool down with these Anti-Inflammatory Popsicles, a refreshing and nourishing treat made with peaches, coconut milk, ginger, and collagen. Swirled with creamy greek yogurt and topped with a crunchy granola-hemp heart mix, these popsicles are as delicious as they are nutritious!

Ingredients

  • 2 1/2 cups frozen peaches
  • 1 can / 400ml coconut milk
  • 1 inch fresh ginger
  • 2 tbsp maple syrup
  • 2 scoops Genuine Health Collagen
  • juice of 1 lime
  • 10 tbsp plain greek yogurt
  • 2 tbsp granola mixed with 2 tbsp Manitoba Harvest hemp hearts

Prep Time 10 minutes
Cook Time 6 hours to overnight freezing time
Total Time 10 minutes + 6-12 hours to freeze
How to Make It
  1. To a blender add frozen peaches, coconut milk, ginger, maple syrup, collagen and juice of 1 lime.
  2. Blend until smooth.
  3. Fill popsicle molds halfway. Add in ½-1 tbsp yogurt per popsicle and use a toothpick or popsicle stick to swirl it in a bit. Fill most of the rest of the way of the mold with the peach popsicle mixture, leaving a little room at the top and then top with 1 tsp of granola hemp hearts mixture. Press the granola-hemp hearts into the popsicle a little bit and then insert the popsicle sticks.
  4. Freeze for at least 6 hours or overnight.
