Pumpkin Cacao Oatmeal Bars

These pumpkin spiced cacao oatmeal bars are the perfect weekday snack, treat or even quick breakfast! With lots of warming spices and a hint of cacao, these high-fiber oatmeal bars will become a staple for the cooler months.

Ingredients

  • 2 cups old fashioned rolled oats
  • 6 tbsp oat flour
  • 2 tbsp cacao powder
  • 1 ¼ tsp baking powder
  • ¼ tsp baking soda
  • 3 tsp ground cinnamon
  • 2 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ¾ cup pure pumpkin puree
  • 1 cup whole milk (or other milk of choice)
  • 1 large egg
  • ⅓ cup maple syrup
  • 2 tablespoons almond butter (or other nut butter of choice)
  • ½ cup chopped walnuts, divided
  • 1 tsp vanilla extract

How To Make It
  1. Preheat the oven to 350F. Lightly coat an 8×8-inch baking pan with cooking spray and line with
  2. In a large mixing bowl, stir together the oats, oat flour, cacao powder, baking powder, baking soda, cinnamon, ginger, nutmeg and salt.
  3. In a separate bowl, whisk together the pumpkin, milk, egg, maple syrup, almond butter and vanilla extract until combined.
  4. Add the wet ingredients all at once to the dry ingredients and stir until combined. Fold in ¼ cup of chopped walnuts.
  5. Pour the batter into the prepared pan and sprinkle over the rest of the chopped walnuts. Bake until set on top, dry at the edges, and a knife inserted in the center comes out clean, about 40-45 minutes.
  6. Let cool in the pan completely, then slice into 9 squares and enjoy.
