    Hemp Crusted Zucchini Chips with Hemp Ranch Dipping Sauce

    Servings: 2-4

    Prep Time: 10 minutes

    Cook Time: 30 minutes



    2 zucchini

    2 tablespoons olive oil

    1/3 cup Manitoba Harvest Hemp Hearts

    1/3 cup gluten-free bread crumbs

    ¼ cup nutritional yeast

    ½ teaspoon paprika

    1 teaspoon sea salt

    2 eggs

    2 tablespoons water



    Preheat oven to 375°F and line baking sheet with parchment paper.

    In a medium bowl, mix together Hemp Hearts, bread crumbs, nutritional yeast, paprika and sea salt.

    In a small bowl, whisk together the egg and water until combined.

    Slice zucchinis to ¼ inch coins and toss with oil until coated.

    Dip zucchini in hemp mixture until well coated then in egg mix, then back in hemp mixture until coated again.

    Place on lined baking sheet and repeat with all zucchini.

    Bake 15 minutes until zucchini are tender and golden.

    Flip over each zucchini then broil 5-10 minutes, watching carefully to prevent burning.

    Remove from oven and serve with Hemp Ranch Dressing >>
