Preheat your oven to 375F.
Spray a mini muffin tin with olive oil and combine all of the ingredients in a bowl and mix thoroughly.
Take 2 Tbsp of mixture and press firmly into a muffin cup and sprinkle some Parmesan on top of each.
Bake for 15 mins or until golden brown and slightly crispy.
