Veggie Nuggets

Your Kids (and you) will love these cheesy veggies bites! Packed with protein and nutrients, perfect for a school lunch.

Veggie Nuggets

  • 1 cup quinoa, cooked and cooled
  • 1/2 cup cheddar cheese
  • 1/2 cup parmesan cheese (save extra for the top)
  • 1 cup vegetables, steamed and chopped (we used broccoli)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 egg

How to Make It

Preheat your oven to 375F.

Spray a mini muffin tin with olive oil and combine all of the ingredients in a bowl and mix thoroughly.

Take 2 Tbsp of mixture and press firmly into a muffin cup and sprinkle some Parmesan on top of each.

Bake for 15 mins or until golden brown and slightly crispy.
